Ingredients
  

  • 3 pounds ground chuck beef 80%-20% lean-to-fat ratio
  • 2 packets classic taco seasoning 1-ounce
  • 2 cups sweet yellow onions, finely chopped
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon freshly cracked black pepper
  • 2 teaspoons smoked paprika
  • 1 1/2 tablespoons Worcestershire sauce
  • 5 tablespoons light neutral oil, divided e.g., canola or avocado oil
  • 16 soft taco flour tortillas, 8-inch size
  • 4 cups shredded Colby Jack cheese, freshly grated from two 8-ounce blocks
  • 1 1/2 cups fresh pico de gallo
  • Pico de Gallo with a Twist Optional
  • 3 cups ripe tomatoes, diced small
  • 1 cup sweet white onion, diced small
  • 1/4 cup fresh lime juice adjust to taste
  • 1 small fresh jalapeño, finely minced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon finely diced red bell pepper
Garnish
  • Dollops of sour cream
  • Extra pico de gallo

Method
 

Step 1: Preheat the Oven
  1. Start by preheating your oven to 400°F (200°C). This temperature will give your ingredients a lovely roasting finish.
Step 2: Prepare the Filling
  1. In a large bowl, mix together the ground chuck, chopped onions, taco seasoning, sea salt, black pepper, smoked paprika, Worcestershire sauce, and 3 tablespoons of oil. This mixture should be well-combined, with plenty of flavor ready to burst.
Step 3: Spread it on the Pan
  1. Grab a large sheet pan and pour the mixture onto it. Spread evenly so every corner gets some love.
Step 4: Roast Until Cooked
  1. Place the sheet pan in the preheated oven. Roast for about 25 to 30 minutes, or until the beef is cooked through and the onions are tender. You'll start to smell the delightful mixture of spices.
Step 5: Bring on the Cheese
  1. Once the meat mix is done, remove the pan from the oven. Sprinkle shredded cheese generously over the top. Return it to the oven for another 5 to 10 minutes, until the cheese is melted and bubbly.
Step 6: Prepare the Tortillas
  1. While the cheese is melting, wrap the tortillas in foil and warm them in the oven for about 5 minutes. Make them soft and ready for filling!
Step 7: Build Your Tacos
  1. Take the sheet pan out and gather everyone around. Set out your warm tortillas, there should be plenty of taco filling, and don’t forget to add your pico de gallo and sour cream on the side. Let the assembly begin!
