Ingredients

  • 2 cups of sweet potato, cut into ½-inch cubes
  • 1 tablespoon of Dijon mustard
  • 2 tablespoons of extra virgin olive oil
  • 1/2 teaspoon of freshly ground black pepper
  • 2 cups of broccoli florets, fresh
  • 1 cup of assorted bell pepper, diced choose your favorite colors
  • 1/2 teaspoon of sea salt
  • 12-16 ounces of Smoked Turkey or Chicken Sausage, roughly 3 cups, sliced
  • 2 cloves of garlic, finely chopped
  • 1 tablespoon of Italian seasoning, or your choice of taco, Cajun, or another spice blend!
  • 1/2 teaspoon of smoked paprika

Method

Step 1: Preheat and Prepare the Pan
  1. First things first. Preheat your oven to 425°F (220°C). While that’s heating up, grab a large sheet pan and line it with parchment paper. This not only prevents sticking but also makes cleanup a breeze.
Step 2: Chop Your Veggies and Sausage
  1. Next, take the sweet potatoes, broccoli, and bell peppers. Chop them into bite-sized pieces. The key here is uniformity; smaller pieces cook quicker and evenly. Then slice the sausage into coins.
Step 3: Toss with Olive Oil and Spices
  1. In a large bowl, combine the chopped vegetables and sausage. Drizzle with olive oil and add the Dijon mustard, black pepper, sea salt, garlic, Italian seasoning, and smoked paprika. Use your hands to mix everything together. Make sure everything is well-coated.
Step 4: Spread on the Sheet Pan
  1. Pour the mixture onto the prepared sheet pan. Spread it out in an even layer. Avoid overcrowding—this ensures they roast rather than steam.
Step 5: Bake
  1. Place the sheet pan in your preheated oven. Roast for about 25-30 minutes. Halfway through, give everything a stir to encourage even browning.
Step 6: Serve and Enjoy
  1. Once the sausages are brown and the veggies tender, take them out of the oven. Let it sit for a minute before serving.

Notes

  • Start with Room Temperature Ingredients: Take sausage and veggies out of the fridge beforehand. They roast more evenly this way.
  • Vary Your Vegetables: Feel free to swap in or out any veggies you have on hand. Carrots, Brussels sprouts, or zucchini work wonderfully!
  • Sausage Varieties: Explore different sausages. Beef, pork, or plant-based options all work well and bring unique flavors.
  • Check for Doneness: Ovens vary. Use a meat thermometer to ensure the sausage is cooked to at least 165°F (75°C).
  • Mix Up the Seasoning: Experiment with different spices or herbs. Taco seasoning works great for a kick!
