Ingredients
  

Chipotle Sour Cream Sauce:
  • 2/3 cup full-fat sour cream
  • 1 chipotle pepper, finely diced
  • 2 teaspoons adobo sauce from the chipotle pepper can
  • 1 tablespoon lime juice for a tangy twist
  • Caramelized Onions & Pierogies:
  • 4 tablespoons unsalted butter
  • 2 large sweet onions, sliced into thin rings
  • Kosher salt and freshly cracked black pepper, to taste
  • 1-2 tablespoons aged balsamic vinegar
  • 16 ounces frozen potato-filled pierogies
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Fresh chives or flat-leaf parsley, chopped, for garnish
Optional:
  • 1/2 teaspoon a pinch of red pepper flakes for extra heat

Method
 

Step 1: Preheat Your Oven
  1. Start by preheating your oven to 425°F (220°C). This high heat ensures we get crispy edges on our pierogies.
Step 2: Prepare the Onions
  1. In a large skillet, melt the butter over medium heat. Add the sliced onions. Sprinkle with a bit of salt and let them cook. Stir occasionally until the onions turn a lovely golden brown, which usually takes about 10-15 minutes.
    Add balsamic vinegar toward the end to enhance their sweetness. Set these aside.
Step 3: Arrange the Pierogies
  1. Grab a large baking sheet. Drizzle it with olive oil. Now, lay down the frozen pierogies. Don’t overcrowd them; give each one a bit of space to crisp up.
Step 4: Season
  1. Sprinkle the pierogies with garlic powder, smoked paprika, salt, and pepper. You want every bite to be flavorful, so don’t skimp on this step!
Step 5: Add the Onions
