Method
Step 1: Prepare the Oven
- Preheat your oven to 425°F (220°C). High heat will give you the crispy edges and tender interior we all love.
Step 2: Prepare the Potatoes
- In a mixing bowl, toss the potato wedges with olive oil, sea salt, garlic powder, smoked paprika, and black pepper. Ensure they are well-coated. Spread them on one side of your sheet pan in a single layer.
Step 3: Roast the Potatoes
- Put the sheet pan in the oven for about 15 minutes. You want them to start turning golden brown. Keep an eye on them to avoid any burning.
Step 4: Season the Fish
- While your potatoes are baking, it’s time to season the fish. In a small bowl, combine lemon pepper seasoning, garlic powder, paprika, dried parsley, and salt. Rub this mixture over your fish fillets.
Step 5: Add the Fish
- Once the potatoes have roasted for 15 minutes, take the sheet pan out. Now, place the fish fillets on the other side of the pan.
Step 6: Bake It All
- Return the sheet pan to the oven and roast for an additional 12-15 minutes or until the fish flakes easily with a fork. Depending on the thickness of your fillets, cooking time may vary. The key is to watch for that flaky texture.
Step 7: Serve & Enjoy
- Once done, serve your delightful dish with optional grated Parmesan, lemon wedges, and perhaps a dollop of tartar sauce.
Notes
- Don’t Overcrowd: Make sure your fish and potatoes aren’t crammed together. This ensures they cook evenly and get that lovely roasted finish.
- Use Fresh Fish: Fresh fish has a better texture and flavor than frozen. If you can, opt for sustainable choices.
- Experiment with Herbs: Fresh herbs like dill or basil can add a punch of flavor. Feel free to experiment!
- Try Different Veggies: If you’re not a fan of potatoes, bell peppers, zucchini, or even green beans work wonderfully here.
- Keep an Eye on it: Fish cooks quickly. Make sure to check for doneness.
