Ingredients
  

For the Chips:
  • 2 to 3 russet potatoes, cut into wedges
  • 2 tablespoons olive oil plus extra for drizzling
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon freshly cracked black pepper
For the Fish:
  • 4 white fish fillets such as tilapia, cod, halibut, flounder, etc.
  • 1/2 teaspoon lemon pepper seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • Salt, to taste
For Serving:
  • Grated Parmesan cheese optional, for a savory finish
  • Lemon wedges for a fresh, tangy garnish
  • Tartar sauce optional, for serving
  • 1 tablespoon fresh chopped dill optional, for added flavor in the fish

Method
 

Step 1: Prepare the Oven
  1. Preheat your oven to 425°F (220°C). High heat will give you the crispy edges and tender interior we all love.
Step 2: Prepare the Potatoes
  1. In a mixing bowl, toss the potato wedges with olive oil, sea salt, garlic powder, smoked paprika, and black pepper. Ensure they are well-coated. Spread them on one side of your sheet pan in a single layer.
Step 3: Roast the Potatoes
  1. Put the sheet pan in the oven for about 15 minutes. You want them to start turning golden brown. Keep an eye on them to avoid any burning.
Step 4: Season the Fish
  1. While your potatoes are baking, it’s time to season the fish. In a small bowl, combine lemon pepper seasoning, garlic powder, paprika, dried parsley, and salt. Rub this mixture over your fish fillets.
Step 5: Add the Fish
  1. Once the potatoes have roasted for 15 minutes, take the sheet pan out. Now, place the fish fillets on the other side of the pan.
Step 6: Bake It All
  1. Return the sheet pan to the oven and roast for an additional 12-15 minutes or until the fish flakes easily with a fork. Depending on the thickness of your fillets, cooking time may vary. The key is to watch for that flaky texture.
Step 7: Serve & Enjoy
  1. Once done, serve your delightful dish with optional grated Parmesan, lemon wedges, and perhaps a dollop of tartar sauce.
