Ingredients

  • 1/3 cup whole milk
  • 18 large eggs
  • Cooking spray
  • Sea salt and freshly cracked black pepper, to taste
  • 1/2 cup sliced button mushrooms
  • 1/4 cup cup diced red bell peppers
  • 1 cup shredded sharp cheddar cheese
  • Sliced bread, for serving
  • Mashed avocado, for serving
  • Chopped fresh parsley, for garnish
  • 1/2 teaspoon onion powder for extra flavor
  • 1/4 teaspoon crushed red pepper flakes for a hint of heat

Method

Step 1: Preheat the Oven
  1. Begin by preheating your oven to 350°F (175°C). This is an important step. If the oven isn’t hot enough, the eggs won't set properly.
Step 2: Prepare the Sheet Pan
  1. Generously grease a large sheet pan with cooking spray. You do not want your eggs sticking to the pan.
Step 3: Whisk Eggs and Milk
  1. In a large mixing bowl, whisk together the eggs and whole milk until combined. Make sure the eggs are beaten well to ensure a smooth texture.
Step 4: Season the Mixture
  1. Add in the salt, pepper, onion powder, and crushed red pepper flakes. This is where you can set the flavor stage. You want to taste the mixture and adjust the seasoning to your preference.
Step 5: Add Veggies and Cheese
  1. Stir in the sliced mushrooms, diced bell peppers, and shredded cheese. Make sure everything is evenly scattered in the mixture.
Step 6: Pour into Sheet Pan
  1. Carefully pour the seasoned egg mixture onto the prepared sheet pan. Spread it evenly to ensure even cooking.
Step 7: Bake
  1. Slide the sheet pan into the preheated oven. Bake for approximately 20–25 minutes, or until the eggs are set and the top is lightly golden. An inserted knife should come out clean.
Step 8: Cool and Cut
  1. Allow the egg mixture to cool for a couple of minutes once out of the oven. This makes it easier to slice. Cut into squares and serve warm, garnished with fresh parsley.

Notes

  • Experiment with different vegetables: Spinach, zucchini, or even asparagus can give a fun twist.
  • Use cheese varieties: Swap in mozzarella or feta for a different flavor profile.
  • Top with fresh herbs: Adding basil or chives as a garnish elevates flavor significantly.
  • Try different spices: Don’t hesitate to explore cumin or smoked paprika for a distinct flair.
  • Make it ahead: You can prep the mixture the night before and bake it in the morning for a seamless breakfast experience.
