Ingredients
  

  • 1 tbsp finely chopped fresh cilantro
  • 1/2 lb spicy pepper jack cheese, finely chopped
  • 1 tsp toasted ground cumin
  • 1 can rich evaporated milk
  • 1/4 tsp smoked paprika
  • 1 can fire-roasted diced green chiles, well-drained
  • 1/2 lb creamy white American cheese, shredded or cubed

  1. First, gather all your ingredients. The prep can be half the fun! You don’t want to be running around looking for cumin when you're halfway through. So, lay everything out neatly.
Step 2: Chop the Cheese
  1. Next, take that spicy pepper jack cheese and chop it finely. This is key. If the pieces are too large, they’ll take longer to melt, and we want this dip to be smooth and glorious.
Step 3: Prepare the Pot
  1. Grab a medium-sized saucepan, and over medium heat, combine the finely chopped spicy pepper jack cheese and the creamy white American cheese. Stir occasionally so that they melt evenly.
Step 4: Mix in the Evaporated Milk
  1. Once the cheese is mostly melted, slowly pour in the evaporated milk. This step is crucial as it will help create that dreamy, smooth texture you’re looking for. Keep stirring until fully combined.
Step 5: Add the Spices
