Ingredients
  

  • 1 1/2 cups long-grain white rice
  • 2 1/2 cups cups low-sodium chicken broth
  • 1 tablespoon vegetable or canola oil
  • 2 tablespoons unsalted butter
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound andouille sausage, cut into ¼-inch slices
  • 2 tablespoons all-purpose flour
  • 1 medium yellow onion, chopped
  • 4 green onions, chopped
  • 4 cloves garlic, finely minced
  • 3 ribs celery, chopped
  • 1 green bell pepper, chopped
  • 1 1/2 teaspoons teaspoons dried basil
  • 1 1/2 teaspoons teaspoons Cajun seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper optional, adjust for desired spice level
  • 14.5 ounce can diced tomatoes
  • 1 tablespoon Worcestershire sauce optional, for extra depth of flavor
  • 1 teaspoon smoked paprika optional, for a smoky touch

Method
 

Step 1: Prep the Ingredients
  1. First things first, gather your ingredients and prepare them. Chop the onions, garlic, bell pepper, and celery. Cut the chicken and sausage into bite-sized pieces. This step makes the cooking process smoother and more enjoyable.
Step 2: Sauté the Meats
  1. In a large pot or Dutch oven, heat the oil and butter over medium heat. Once it’s hot, add the chicken pieces. Cook until browned, about 5-7 minutes. Then, toss in the sliced sausage. Sauté for another 5 minutes until both meats have a nice golden color. The aroma will make your taste buds dance!
Step 3: Add the Vegetables
  1. Add the chopped onion, green onion, garlic, celery, and bell pepper to the pot. Stir everything together and cook for about 5 minutes, allowing the vegetables to soften and release their flavors. Don’t forget to give it a occasional stir to prevent sticking.
