Ingredients

  • 28 crisp ladyfinger biscuits
  • 16 ounces mascarpone cheese
  • 5 large egg yolks, well chilled
  • 1/2 cup fine granulated sugar
  • 1 3/4 cups heavy whipping cream
  • 1 tablespoon pure vanilla extract
  • 1 cup freshly brewed espresso
  • 1/4 teaspoon sea salt flakes
  • 1/4 cup Dutch-processed cocoa powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 orange Zest

Method

Step 1: Prepare the Coffee Mixture
  1. First, brew your espresso. Use high-quality coffee beans for the best flavor. Once brewed, let it cool slightly. If desired, add dark rum or coffee liqueur to the espresso for an extra kick.
Step 2: Whip the Cream
  1. Next, in a large mixing bowl, pour your chilled heavy whipping cream. Whip it using a hand mixer or stand mixer until soft peaks form. This step is crucial for creating that fluffy texture in your tiramisu. Set aside.
Step 3: Make the Mascarpone Mixture
  1. Now, in another bowl, combine the chilled egg yolks and sugar. Using a mixer, beat until the mixture is pale and slightly thickened. This usually takes about 3-5 minutes. Then, fold in the mascarpone cheese and vanilla extract until smooth and creamy.
Step 4: Combine the Mixtures
  1. Gently fold the whipped cream into the mascarpone mixture. Do this slowly to retain the lightness of the whipped cream. The combined mixture should be airy and luscious.
Step 5: Assemble the Tiramisu
  1. Time to layer! Dip each ladyfinger into the cooled espresso briefly—don’t let them soak too long, or they will get mushy. Arrange a layer of soaked ladyfingers in the bottom of your serving dish. Spread half of the mascarpone mixture over them. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
Step 6: Chill and Finish
  1. Cover the dish with plastic wrap and refrigerate for at least four hours, preferably overnight. Just before serving, dust the top generously with cocoa powder.

Notes

  • Use Fresh Ingredients: Fresh mascarpone and quality espresso make a significant difference.
  • Don’t Over-Soak the Ladyfingers: A quick dip is essential; otherwise, the dessert will turn soggy.
  • Chill Long Enough: Allow the tiramisu to sit overnight if possible; this helps flavors meld beautifully.
  • Customize Flavors: Experiment with liqueurs, spices, or citrus to find your perfect combo.
  • Serve with Extra Cocoa: Don’t be shy with dusting cocoa; it elevates the look and taste.
