- Next, in a large mixing bowl, pour your chilled heavy whipping cream. Whip it using a hand mixer or stand mixer until soft peaks form. This step is crucial for creating that fluffy texture in your tiramisu. Set aside.
Step 3: Make the Mascarpone Mixture
- Now, in another bowl, combine the chilled egg yolks and sugar. Using a mixer, beat until the mixture is pale and slightly thickened. This usually takes about 3-5 minutes. Then, fold in the mascarpone cheese and vanilla extract until smooth and creamy.
Step 4: Combine the Mixtures
- Gently fold the whipped cream into the mascarpone mixture. Do this slowly to retain the lightness of the whipped cream. The combined mixture should be airy and luscious.
Step 5: Assemble the Tiramisu
- Time to layer! Dip each ladyfinger into the cooled espresso briefly—don’t let them soak too long, or they will get mushy. Arrange a layer of soaked ladyfingers in the bottom of your serving dish. Spread half of the mascarpone mixture over them. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
