  • 1 1/2 pounds ground beef 80% to 85% lean
  • Freshly cracked black pepper

Step 1: Prep the Patty Mix
  1. In a large mixing bowl, grab your ground beef. Now, sprinkle in your Worcestershire sauce, smoked paprika, a hefty pinch of sea salt, and freshly cracked black pepper.
    Using your hands, mix everything gently. You don’t want to overwork the meat; that can lead to a dense patty. Just enough to combine the ingredients.
Step 2: Form the Patties
  1. Divide the mixture into equal portions. I usually aim for about 4 to 6 patties, depending on how thick you prefer them. Form each portion into a burger shape.
    Make a small indent in the center of each patty. This helps them cook evenly and prevents those pesky bulges on top.
Step 3: Heat the Pan
  1. Now, it’s time to get cooking! Place a large skillet over medium-high heat. Add a tablespoon of butter or your chosen cooking oil.
    Let it melt and coat the bottom of the pan. The pan should be hot enough that the butter starts to sizzle.
Step 4: Cook the Patties
  1. Carefully place the patties on the skillet. We want to hear that satisfying sizzle! Cook each side for about 4 to 5 minutes.
