Ingredients

  • 1 cup dark or golden rum or to taste
  • 3.25 cups full-fat coconut milk preferably canned for a creamier texture
  • 1/4 teaspoon ground nutmeg
  • 1.25 cups granulated sugar adjust slightly based on sweetness preference
  • 1 teaspoon pure vanilla extract
  • 10 oz sweetened condensed milk about 1.25 cups
  • 12 oz evaporated milk around 1.5 cups
  • 1 lime zest optional
  • 4 large egg yolks
  • 1 teaspoon freshly ground cinnamon plus more for garnish

Method

Step 1: Combine the Ingredients
  1. In a blender, add the coconut milk, sweetened condensed milk, evaporated milk, rum, and egg yolks. The egg yolks add richness and a velvety texture.
Step 2: Blend Until Smooth
  1. Blend on high for about 30 seconds or until everything is well combined. You want a smooth mixture without any lumps.
Step 3: Add the Spices
  1. Once blended, add the ground nutmeg, cinnamon, and vanilla extract. If you’re feeling adventurous, toss in the lime zest for a bright kick. Blend again until everything is incorporated.
Step 4: Adjust to Taste
  1. After blending, taste the coquito. Adjust the sweetness by adding more sugar if needed. You can also tweak the rum based on your preference.
Step 5: Chill
  1. Transfer the coquito to bottles or a large pitcher and refrigerate for at least four hours. This allows the flavors to meld together beautifully.
Step 6: Serve
  1. When ready to serve, give it a good stir or shake. Pour into glasses, and sprinkle extra cinnamon on top for a finishing touch.

Notes

  • Use High-Quality Rum: A good-quality rum can make a significant difference in flavor. Opt for dark rum for a deeper taste.
  • Chill your Ingredients: Cool down your ingredients before mixing. This enhances the refreshing aspect of the drink.
  • Blend Thoroughly: Ensure that all ingredients are well-blended to create a smooth texture. Avoid lumps at all costs.
  • Consider Your Sweetness: If you prefer a less sweet drink, start with less sugar and add more if needed.
  • Customize It!: Feel free to experiment! Add different spices like cloves or nutmeg for a twist, or experiment with different types of milk.
